- In a large bowl, whisk flour, cornstarch, baking powder, salt, sugar, nutmeg and cinnamon until well combined. In a small bowl, whisk egg yolks, melted butter, milk, vanilla extract and orange zest.
- With a stand-up or electric mixer, beat egg whites just until stiff peaks form.
- Combine the milk mixture with the dry ingredients and stir until combined and mostly smooth.
- Fold egg whites gently but completely into mixture. Batter will not be completely smooth.

Tips: Use a figure eight motion to more effectively fold in egg whites without losing volume. - Lightly brush waffle griddle with more melted butter, and fill griddle with batter. Cook for 4–5 min or until golden brown.
- Keep warm on racks in the oven until ready to serve. Serve with Bonne Maman Four Fruits Preserves.
