Steps
- Combine vinegar, oil, Dijon mustard, and Bonne Maman Fig Preserves in a small jar.
- Cover and shake until combined and emulsified.
- In a bowl, toss arugula and vinaigrette mixture until greens are evenly coated.
- Spread butter lightly on bread.
- Neatly array dressed greens and top them with sliced fennel, tomato, avocado and feta.

Tips: Spread additional preserves on the underside of the top half of the bread if you wish to have a sweeter, fruitier sandwich.
