Steps
- Preheat the oven to 350ºF.
- Spray a muffin tin with cooking spray and set aside.
- In a large bowl, mix the softened butter, lemon zest, and vanilla extract.
- Sift the sugar into the bowl and mix well.
- Gradually fold in the sifted flour, baking powder, and salt, and mix well. Use a wooden spoon so that you don’t overwork the dough.
- Add the sifted cornstarch and mix until a soft dough forms.
- Make walnut-sized balls with the dough and gently place them into the muffin cup molds, patting them halfway up the sides.
- Using a spoon, carefully fill each cup with Bonne Maman’s Mixed Berries Preserves. Be sure not to overfill them. Top with the sliced almonds then place the pan in the oven.
- Bake for 15 to 20 minutes until the jam tarts are slightly golden and set on top. Remove the muffin pan from the oven and place on a wire rack.
- Allow the tarts to cool completely before removing them from the pan. Sift some powdered sugar on top and serve with fresh winter fruit and a hot cup of tea.
